Sorullitos
This classic Puerto Rican finger food is the source of many fork fights between Carlos and Carlito.
Ingredients:
2 Cups De-Ionized Water
1 1/4 Cups 200 micron Corn Meal
2 Slices of American Cheese (binder)
1 Tsp Salt (processing additive)
1 Tbls Sugar (OH functionality modifier)
To Make the sorullitos:
Mix the water, salt, and sugar. in a saucepan and bring to boil
Turn the heat to low and stir in the cornmeal a little at a time
Tear the cheese into tiny pieces and stir into the cornmeal dough ball
Allow the dough to cool until it can be handled. Roll into thin sticks while still warm
Fry the sticks in oil for 4-6 minutes until golden and crunchy. Enjoy.
