Sorullitos

This classic Puerto Rican finger food is the source of many fork fights between Carlos and Carlito.

Ingredients:

  • 2 Cups De-Ionized Water

  • 1 1/4 Cups 200 micron Corn Meal

  • 2 Slices of American Cheese (binder)

  • 1 Tsp Salt (processing additive)

  • 1 Tbls Sugar (OH functionality modifier)

To Make the sorullitos:

  1. Mix the water, salt, and sugar. in a saucepan and bring to boil

  2. Turn the heat to low and stir in the cornmeal a little at a time

  3. Tear the cheese into tiny pieces and stir into the cornmeal dough ball

  4. Allow the dough to cool until it can be handled. Roll into thin sticks while still warm

  5. Fry the sticks in oil for 4-6 minutes until golden and crunchy. Enjoy.

 Blue’s Sugar Cookies are an old favorite from the Garcia Homestead in Kansas. My mother printed this recipe and the website that it hailed from is long since defunct, so we continued to use this one sheet of paper as it accumulated water damage, coffee stains, wrinkles, and rips.

The ingredients you’ll need:

  • 1 Cup Butter

  • 1 Cup Sugar

  • 1 large Egg

  • 2 teaspoons Baking Powder

  • 1 teaspoon Vanilla

  • 3 Cups Flour

To make the cookies:

  1. Preheat an Oven to 400 degrees.

  2. Blend the butter and sugar well

  3. Mix the egg, vanilla, and baking powder, into the butter and sugar mixture, and then add the flour 1 cup at a time while stirring

  4. Divide the dough on a cookie sheet and bake for 6 minutes.

  5. Enjoy
